Paul John Whiskey- The Liquid Gold
Among the three Indian whiskey brands, the second one is the Paul John Single Malt.
Though founded in Bangalore in the year 1992, by the owner and chairman Paul P. John, John Distillery was first launched in London in 2012 on 5th October and in Goa, India in 2013. Two variances of this brand are single malt and single cask whiskeys. Now, the headquarters are in Bangalore where it was launched in 2015.
The main component of this whiskey is Indian malted barley and in some variants, Scottish peat is added. After that, the whiskey is distilled in the traditional copper pots and the matured in Charred Oak Casks of American origin. The maturation of this whiskey takes place in an underground cellar within a controlled temperature and is stored in 10,000 barrels.
The company started at around 1996 but the decision of making single malt was taken in the year 2008. This was an attempt to enter the premium liquor market. Michael D'Souza, one of the whiskey experts created a wash which was above 5% but less than 8%, which added a mild sweetness in the whiskey. The alcohol strength of this whiskey is 55% abv but when heat is applied before finalizing the product, the strength increases to 57%. India having a hot humid climate has an advantage of speed maturation. A maturation process of 4-5 years in India is equivalent to 15 years of Scotch maturation.
In October 2012, the first single malt whiskey called the Paul John Cask 161 Whiskey was launched. The cost was £60 for a bottle capacity of 700 ml. This whiskey earned the Liquid gold awards presented by the whiskey connoisseur himself, Jim Murray.

Whiskey Notes-
Paul John Brilliance is one of the most loved variances of the brand and has very unique notes. The first aroma that can be detected is the juicy barley, salted butter, and Ryvita. Then the following notes are of cinnamon coated berries and mild green apple skin. The taste is refined notes of chocolate and caramel.
